My kids won’t touch a salad for dinner, but if I separate all the parts, they like it just fine! And I go light on the green stuff. Oh, and no goat cheese. I think they would like it if I called it chevre (what kid wants to eat something from a goat, am I right?). Now if only chickens had 3 legs we’d be all set…my kids love those rotisserie chicken legs.
Autumn Chicken Salad with Maple Vinaigrette
4 cups baby greens
1 Honeycrisp apple, cut into slices (or any sweet and tart, crispy apple)
1/4 cup crumbled goat cheese
1/4 cup chopped walnuts
2 tablespoons maple syrup
2 tablespoons champagne vinegar
4 tablespoons olive oil
big pinch of salt
freshly ground black pepper
rotisserie chicken, white meat
In a glass jar with a lid, combine the maple syrup, vinegar, salt and pepper. Put on the lid and shake well to combine. Add the olive oil and shake well again. Drizzle over salad greens tossed with apples, walnuts, dried cranberries, and goat cheese. Add chicken. Sprinkle with salt and pepper and serve.
