Use a food processor to quickly chop the cranberries.

Cranberry Apple Salad
serves 4-6

12 ounce bag fresh cranberries, coarsely chopped

3 tablespoons sugar

1 tablespoon dijon mustard

juice of 2 limes

1 tablespoon white wine vinegar

2 tablespoons honey

1 teaspoon salt

1/2 teaspoon pepper
1/4 cup olive oil

chopped walnuts, goat cheese, chopped apple

 

In a small bowl, combine chopped cranberries and sugar.  Cover and refrigerate for a few hours to overnight.

 

To make the dressing, in a medium bowl, whisk lime juice, champagne vinegar, honey, and salt and pepper.  Add oil in a slow stream, whisking constantly.

 

Toss the salad greens with the dressing.  Garnish with cranberries, walnuts, apples, and goat cheese.
