I’ve mentioned here several times that I don’t like cranberry sauce (not fresh or canned).  But I do really enjoy fresh cranberries!  This salad combines creamy goat cheese, crunchy walnuts, a sweet vinaigrette, tart cranberries, and crisp apples.  It’s the perfect salad!  Top it with some roasted chicken and call it dinner, or serve it alongside a warm soup.


Cranberry Apple Salad
serves 4-6


1 1/2 cups fresh cranberries, coarsely chopped (I use a food processor)
2 tablespoons sugar
2 tablespoons fresh lime juice

1 tablespoon champagne vinegar

2 tablespoons honey

1 teaspoon salt

1/2 teaspoon pepper
1/4 cup olive oil

1/2 cup chopped walnuts

1 large apple, chopped (Honeycrisp are perfect this time of year)
1/4 cup sliced green onions

1/4-1/2 cup goat cheese, to taste
romaine lettuce or spinach mix


In a small bowl, combine chopped cranberries and sugar.  Cover and refrigerate for a few hours to overnight.  You can just do this in the morning before serving the salad.


To make the dressing, in a medium bowl, whisk lime juice, champagne vinegar, honey, and salt and pepper.  Add oil in a slow stream, whisking constantly.


Toss the salad greens with the dressing.  Garnish with cranberries, walnuts, apples, and goat cheese.
