Summer is winding down, but the store is still packed with good strawberries and peaches. I paired this salad with grilled pork tenderloin and a little rice. A salad is always great as a quick side dish!
serves 4-5
Peach and Strawberry Salad with Honey Vinaigrette
4 cups spring mix salad greens
1/2 cup sliced fresh strawberries
1/4 cup sliced almonds
1/4 cup crumbled feta cheese
1/4 cup honey
1/4 cup Champagne vinegar
1/4 cup olive oil
salt and pepper to taste
In a jar with a lid, combine the honey, vinegar, olive oil, and salt and pepper. Shake well. Toss with the greens, berries, peaches, cheese, and nuts.
