Orange Chicken

(serves 4-5)

4 chicken breasts, cut into pieces

1/4 cup flour

3 tablespoons canola oil (or enough to coat the pan)

1 (12.75 ounce) jar orange marmalade 

3 garlic cloves, minced

2 tablespoons soy sauce

1 tablespoon fresh ginger, grated 

 

Toss the chicken with salt and pepper to taste.  Sprinkle the flour over the chicken and toss until it’s well coated. 

 

Heat a large skillet over medium heat and add the oil. Add the chicken in a single layer. Cook until browned on each side, about 5 to 6 minutes per side. 

 

Meanwhile, in a small saucepan combine the orange marmalade, garlic, soy sauce, and ginger.  Cook over low heat until chicken is cooked.  

 

Pour the sauce over the chicken, raise heat to high, and simmer for 2-3 minutes. 

 

Serve with rice.
