Chicken Posole Verde 


4 chicken breasts, cooked and shredded

1 onion, diced

1 box chicken stock

1 jar salsa verde

1 can white hominy, rinsed and drained

salt and pepper, to taste

sour cream, cilantro, lime, for serving


Saute onion in olive oil over medium heat until translucent.  Add 1 box chicken stock, 1 jar salsa verde, 1 can hominy, and chicken.  Simmer for 15-20 minutes until hot. Season with salt and pepper to taste. Serve with sour cream, cilantro, fresh limes.
