It’s a raw kale salad. I know you’re thinking, “raw kale?? I don’t think so.”  Stay with me here; I was hesitant, too.  Add a big squeeze of lemon juice, freshly grated Parmesan cheese, olive oil, and toasted walnuts….it’s sounding better, right?  Just give it a try. I mean, kale is one of those superfoods that we are supposed to be eating, you know.  It only has something like 35 calories per cup and it really fills you up.  Try it! You might just like it.

Lemon Parmesan Kale Salad


4 cups chopped fresh kale

2 tablespoons olive oil

juice of one whole lemon

1/4 cup freshly grated Parmesan cheese (I grate mine in the food processor)

big pinch of salt and freshly ground pepper

1/3 cup toasted walnuts, roughly chopped


Whisk together olive oil, lemon juice, salt and pepper.  Add kale and Parmesan, and toss the salad.  Add walnuts.
