This is basically a taco salad, but a healthy one. Go easy on the cheese, sour cream, and chips, though!  To get the kids to eat it, I just served everything individually.  Now if only I could figure out how to get a rotisserie chicken with 3 legs so each child could get one….

Southwest Chicken Salad
for 4 salads:

 

1 rotisserie chicken (I only use the white meat)
salad greens
2 avocados
2 cups cherry tomatoes, cut in half
2 ears of fresh corn
salsa
tortilla chips
salt and pepper
fresh lime juice

 

Before assembling the salad, prep all the ingredients. Shred the chicken from the rotisserie chicken. Cut up avocado and spritz with lime juice if you’re not using it immediately to keep it from browning. Cut corn off the ears and microwave for just one minute to cook it. Cut up tomatoes. Assemble salad to your taste, salt and pepper the whole thing, then top with a big squeeze of lime juice.
