I don’t know about you, but spring weather makes me want to grill (and sneeze)! This is my go-to grilled chicken recipe because 1) it’s super easy and 2) the kids absolutely love it. I hesitate to even call it a “recipe”…

Throw some asparagus on the grill while you’re at it….drizzle it with olive oil and sprinkle with salt and pepper.  That’s all you need. Cook it after the chicken is finished (and resting) and let it grill for only about 2 minutes.  You want it to stay crispy.

BBQ Grilled Chicken

 

4 boneless skinless chicken breasts

2 tablespoons salt-less spice rub (use whatever you like)

1 teaspoon salt

2 tablespoons olive oil

1/2 cup BBQ Sauce (I use either McClard’s or Head Country)

 

Drizzle chicken with olive oil, and coat with the spice rub and a sprinkle of salt.  Heat grill to high.  Grill one side until there are black marks and it no longer sticks to the grill, about 5 minutes (the time will depend on the thickness of the chicken).  Flip the chicken and then brush the barbeque sauce on the cooked side.  Let it cook on the other side for about 5 minutes.  Flip it again, and brush on more sauce.  Let the chicken finish cooking, probably about 5 more minutes.  Rest the chicken for 5 minutes, and then slice to serve. Serve with extra (fresh) barbeque sauce.
