I made these muffins a few weeks ago and they disappeared so fast I hardly even remember making them! Deliciousness.

Cheesy Monkey Bread Muffins

makes 24 muffins


2 large cans of biscuit dough

1 cup butter (I didn’t say it was healthy…)

1 large yellow onion, sliced

1 teaspoon sugar

pinch of salt

2 cups white extra sharp cheddar, shredded

Preheat oven to 375 degrees.


In a large skillet, melt 1 tablespoon of butter.  Add sugar, salt, and sliced onions, and cook on low for about 20 minutes, stirring occasionally. Let the onions get very brown and caramelized.
Cut biscuit dough into quarters, and place three into each muffin tin.  Top muffins with about a teaspoon of the onions and then add about 1/2 teaspoon of softened butter.  Add shredded cheese to the top.  Bake for 12-15 minutes, or until golden and bubbly. Remove from oven.  Allow rolls to cool completely before serving (if you can).
