It’s like a burrito without the tortilla.  Make it Chipotle style and you’ll love it. Alternately, you could make this same recipe into tacos, burritos, or quesadillas..

Chicken Burrito Rice Bowl


1 lb. boneless skinless chicken breasts
16 oz. jar salsa
1/2 tbsp cumin
1/2 tbsp garlic powder
1/4 tsp salt
1/8 tsp pepper
2 cups brown rice, cooked
toppings: avocado, sour cream, salsa, beans (I used leftover black beans from last night), cilantro, and fresh lime


Put chicken into the slow cooker. Top with salsa and spices.  Cook on low for 6-8 hours. Add rice to a bowl. Squeeze lime juice over it, add a little salt, then top with chicken. Add toppings to taste.
