This meal was a hit! So much, in fact, that John got home late and it was all gone.  Oops. The kids devoured it.  I mean, what’s not to like?  There’s butter, garlic, and lemon, served with toast for catching all the extra sauce…yum!

 

Baked Shrimp Scampi

 

12 oz. frozen shrimp, peeled and deveined (with or without tails, your choice), thawed

1 stick salted butter

4 cloves garlic, minced

zest and juice of one lemon

1 tablespoon dry white wine (optional)

1 teaspoon salt

1/4 teaspoon pepper

 

Preheat oven to 425.

 

In a microwave proof bowl, heat the butter, garlic, wine, lemon zest, lemon juice, salt and pepper until the butter is melted.  Pour the butter mixture over the shrimp in an oven safe baking dish.

 

Bake the shrimp for about 10 minutes, or until it’s pink and the butter is bubbly.  Serve with toast, pasta, or rice, along with extra lemons.
