I’ve been wanting to make these potatoes for a long time and I finally got around to it.  Why did I wait? Ree calls them Crash Hot Potatoes, but I’ll just call them Pioneer Woman Potatoes.  And next time we’re hanging out, I’ll cook them for her.  She’s my homegirl, you know.

 

 

Pioneer Woman Potatoes

 

12 new potatoes

3 tablespoons olive oil

salt and pepper to taste

fresh rosemary, to taste

Boil the potatoes for about 10 minutes, or until fork-tender.

 

Drizzle olive oil onto cookie sheet. Place potatoes on the cookie sheet leaving plenty of room between each potato.

 

With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.

 

Sprinkle potatoes with kosher salt, freshly ground black pepper and fresh chopped rosemary.

 

Bake in a 450 degree oven for 20-25 minutes until golden brown.
