First thing you need to do for the perfect turkey sandwich is roast a turkey breast.  None of that deli stuff.  I can’t believe what a difference it makes!  And don’t be scared of this sandwich combo. Adding the honey is my friend’s idea, and it makes this sandwich truly delightful.

 

Roasted Turkey, Apple, and Cheddar Sandwich with Honey

4 sandwiches

 

1 3-4 pound turkey breast, thawed

salt and pepper

olive oil

1 honeycrisp apple, cut into thin slices

4 ounces sharp white cheddar cheese

2 tablespoons honey (more or less to taste)

4 ciabatta rolls

 

To roast the turkey, preheat oven to 350.  In a roasting pan with a rack, drizzle the turkey breast with extra virgin olive oil.  Sprinkle both sides with salt and pepper, and place it skin side up in the pan.  Roast for 2 hours or until internal temperature reaches 165.  Let the turkey rest for at least 15 minutes.  Cut into thin slices.

 

 

Scoop out the inside of the ciabatta rolls.  On a baking pan, layer the turkey, salt and pepper, and cheese on the bottom halves of the rolls.  Bake the open sandwiches and the tops of the rolls for about 5 minutes, or until cheese is melted.

 

Add the apple and honey and finish assembling the sandwich.
