I am in love with our local wing place.  I don’t care for the wings, really, but the chicken tenders dipped in the buffalo sauce are my go-to fast food.   I got to thinking about how many calories might be in those fried chicken tenders dipped in that buttery, tangy, pepper sauce….I’m thinking a lot.

 

 

Here’s a recipe you can make for dinner and not have to lie to your My Fitness Pal (not that I would EVER do that) app. I’m amykpj, if you want to follow me there.  It’s just rotisserie chicken with wing sauce, but you really get the same punch of flavor when you add the blue cheese sauce as you get with the restaurant wings.

 

Buffalo Chicken Sandwiches with Blue Cheese Sauce

serves 2

 

2 chicken breasts from rotisserie chicken

1/4 cup Frank’s Red Hot Buffalo Wing Sauce

1/4 teaspoon salt

2 bagel thins (or your bread of choice)

 

For sauce:

 

1/4 cup mayo

1/2 cup fat free Greek yogurt

1 clove garlic

juice of one lemon

1/4 cup blue cheese, crumbled (I used Roquefort)

salt and pepper to taste

 

To make the sauce, combine the mayo and yogurt in a small bowl.  Grate the garlic with a microplane.  Juice the lemon into the sauce, and add salt and pepper. Crumble in the blue cheese and gently stir.  Can store leftover in the refrigerator.

 

Shred the chicken and add the salt and the wing sauce.  Assemble the sandwich and top with the blue cheese sauce.  Serve with carrots and celery, with extra sauce for dipping.
