If you’ve been reading this blog for any time at all, then you know how much I love tomatoes. They are my favorite food.  This Farmers’ Market Tomato Bruschetta is what I like to make when I have a lot of tomatoes, so I thought it would be excellent on top of chicken, too, for a more hearty meal.   Serve with a little rice or maybe some french bread.   You’ll love it!

 

Grilled Bruschetta Chicken

serves 4-6

 

4 boneless, skinless chicken breasts
1/4 cup olive oil
1/4 cup balsamic vinegar
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 whole green onions, sliced
big handful of fresh basil, chopped
2 cloves garlic, grated with a microplane
1 pound (more or less) tomatoes, cut up

 

Mix the oil, vinegar, herbs, and spices, and add tomatoes.  Allow to marinate 2-3 hours or longer.

 

Drizzle the chicken with olive oil, and sprinkle with salt and pepper. Grill over high heat for about 5 minutes on each side (depending on the thickness) and internal temperature reaches 165 degrees.

 

Cut chicken for serving and pile the tomatoes on top. Serve over rice or with french bread on the side.  Spoon the tomato juices over the chicken.
