There is just nothing like summer tomatoes, peaches, and watermelon.  They are in abundance at every roadside stand and farmers’ market right now.    One of my favorite local restaurants, Brickhouse Kitchen, has this fabulous salad using all local, fresh, ingredients that I’ve tried to duplicate.   Mine was even better because I didn’t have to find a place to park downtown!

 

Tomato, Peach, and Watermelon Salad

Basil Vinaigrette

 

Cut the tomatoes, peaches, and watermelons into the same size chunks.  Mix with vinaigrette, and serve over salad greens.   Top with crumbled queso fresco.

 

Basil Vinaigrette

 

2 tablespoons honey
2 tablespoons champagne vinegar
4 tablespoons olive oil
big pinch of salt
freshly ground black pepper

1 teaspoon chopped fresh basil

 

In a glass jar with a lid, combine the honey, vinegar, basil, and salt and pepper.  Put on the lid and shake well to combine.  Add the olive oil and shake well again.
