I like to heat the pita bread in a skillet with a little olive oil to warm before serving.

 

Greek Turkey Meatballs

feeds 5-6

 

1.25 pounds ground all-white meat turkey

5 ounces frozen, chopped spinach, thawed with liquid squeezed out

2 cloves garlic, grated on a Microplane

4 ounces feta cheese, crumbled

2 eggs

1/3 cup plain bread crumbs

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon ground black pepper

 

Preheat oven to 400° F.

 

Add ground turkey, spinach, garlic, feta, eggs, bread crumbs, oregano, salt, and pepper to large bowl and mix well. Make into evenly sized, small meatballs  (use a small ice cream scoop).

 

Place meatballs on a lightly greased cookie sheet and place in oven for 10 minutes. Turn the meatballs over and return to oven for 10 more minutes.

 

Serve with pita bread, sliced cucumbers and peppers, and Tzatziki sauce.

Tzatziki Sauce

 

1 cup plain 2% Greek yogurt

1/2 seedless cucumber, grated on box grater

1/2 teaspoon salt

1/4 teaspoon pepper

juice of one lemon

2 cloves garlic, grated

fresh mint, to taste

 

Mix it all together.  Serve immediately, or sauce will keep overnight in the refrigerator.
