This shortcut Caesar Salad recipe is so good and so easy you’ll make it over and over (I do!).   Add chicken and make this salad a full meal.

 

Store extra dressing in the refrigerator for up to a week.

 

Easy Caesar Salad

serves 8-10

 

2 cups mayonnaise

4 cloves garlic

2 teaspoons anchovy paste

1 cup fresh lemon juice

1/2 cup parmesan cheese

salt and pepper

8 cups romaine lettuce, chopped

homemade croutons

 

In a food processor, mince the garlic cloves.  Add the mayo and the anchovy paste and blend until combined.  Next, stream in the lemon juice.  Add the salt and pepper, to taste, and the Parmesan cheese and blend until combined.  Toss dressing with lettuce and top with homemade croutons and extra Parmesan cheese.

Homemade Croutons

 

1/2  loaf french bread

olive oil

salt and pepper

 

Preheat oven to 350°.

 

Cut or tear bread into small cubes.  Drizzle with olive oil, sprinkle with salt and pepper and bake for about 5 minutes, or until toasted.  Cool on sheet pan and add to Caesar Salad.
