This is meal #4 from that Petit Jean Ham.  Meal #1 was Baked Ham, #2 was Party Ham Sandwiches, Meal #3 was regular old ham sandwiches last night, and tonight it’s Slow Cooker Senate Bean Soup. There is still a little bit of ham leftover, but I think I’ll have to give it to the next door dog.  My family doesn’t want any more ham at the moment.  I get that.

 

 

Slow Cooker Senate Bean Soup

 

2 pounds dried navy beans

1 ham bone with some ham left on it

1 large yellow onion, peeled and cut in half

1 box low sodium chicken broth

water to cover

salt and pepper to taste

 

Rinse the dry beans and check for rocks (I found my FIRST rock this time around).  Soak the dry beans overnight.

 

Discard soaking water and rinse beans again.   Add beans to slow cooker with ham bone, onion, and chicken stock.  Add extra water if necessary to cover the beans by an inch.  Cook beans on low for 6-8 hours.  To serve, discard ham bone and onion.  Sprinkle bowls with course salt and freshly ground pepper.
