My husband is a peanut butter cookie connoisseur.    For real, he knows if a peanut butter cookie will be good just by looking at it.  And I’ll tell you, this recipe is his favorite.  They are crunchy on the outside, and chewy inside, the way a perfect cookie should be.  They are pretty delicate, so these cookies aren’t great for your lunchbox.  Might as well go ahead and eat them all in one day!   This recipes only makes 2 1/2 dozen anyway, so go ahead!

John’s Favorite Peanut Butter Cookie

 

1 cup smooth peanut butter
1 cup sugar plus 2 tablespoons
1 large egg, lightly beaten

1 teaspoon baking soda

 

Prepare 2 baking sheets with parchment paper and preheat oven to 350.

 

Beat together peanut butter and sugar with an electric mixer for 2 minutes.  Beat in eggs and baking soda until well combined.  Mixture will look crumbly.

 

Roll teaspoons (small cookies!) of dough into balls and arrange 1 inch apart on prepared baking sheets.   Flatten the dough with tines of a fork in a crosshatch pattern, dipping the fork in the 2 tablespoons of granulated sugar before each cookie.

 

Bake cookies until golden, 8-10 minutes.  Cool on baking sheet for 2 minutes, then transfer to rack to cool.
