Serve this salmon with any green veggie and rice or cauliflower rice for a quick weeknight meal.

 

Easy Weeknight Salmon 

serves 4

 

4 salmon filets

1 tablespoon olive oil

salt and pepper, to taste

2 tablespoons butter

juice of one lemon

 

Heat olive oil in a nonstick pan over high heat.  Pat salmon dry with paper towels and sprinkle with salt and pepper.  Place salmon in hot oil and cook for 5 minutes on first side.  Flip the salmon and cook on second side for 3-4 minutes.  Top each salmon filet with butter and add lemon juice.  Serve immediately.
