Broccoli Cheddar Bake (adapted from here)

serves 5-6


1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

2 tablespoons butter

1 (16 ounce) box orzo pasta

3 cups broccoli florets, cut into bite sized pieces

2 teaspoons salt

½ teaspoon pepper

½ cup white wine

1 (32 ounce) box chicken stock 

½ cup milk 

2-3 chicken breasts, cooked and diced

1 ½ cups grated cheddar cheese 


Preheat oven to 425°.   


Heat the olive oil in a large skillet over medium heat. Add the onion and cook for about 5 minutes.  Add the garlic and stir. Next, add the butter, orzo, broccoli, and salt and pepper, and cook until toasted.  About 5 minutes.  


Add the wine, scraping any bits from the bottom of the pan, then add the chicken stock.  Simmer 8-10 minutes, stirring frequently, until orzo is cooked.  Stir in the milk, chicken, and ½ cup of cheese.  Top with 1 cup of cheese and bake until melted.
