My oldest daughter has always been our adventurous eater.  We exposed her to all sorts of different kinds of restaurants and foods when she was a toddler, and she just ate whatever we gave her.  John and I were convinced we were the best parents in the world!  Then our second daughter came along, and she wouldn’t eat anything.  As a baby, she’d even spit out the baby food bananas!   Hmm…maybe it wasn’t all our expert parenting that made Kate enjoy healthy, quality food…..

 

Anyway, one of the few dinners everyone likes is Nachos.  I mean, who doesn’t like nachos??  Here’s a bit of a healthier version.

 

 

Turkey and Black Bean Nachos

 

1 pound all white meat ground turkey

3 tablespoons homemade taco seasoning

1 teaspoon salt

3/4 cup water

Homemade Baked Tortilla Chips

1 can black beans, drained and rinsed

1/2 cup grated Monterrey Jack cheese

1 avocado

1/4 cup cilantro

handful of cherry tomatoes

 

Brown ground turkey in a large skillet with a teaspoon of olive oil.  While it is browning, add the taco seasoning and the salt.  Once the browning is complete, add the water and allow it to simmer until most is evaporated. Assemble the nachos by layering chips, meat, beans, and cheese in a casserole dish.  Bake at 400 for about 5 minutes, or until cheese is melted.  Top with avocado, cilantro, and tomatoes.
