This recipe is an awesome twist to  your weekly Taco Night.  Your kids will adore the taco bowls, and the whole thing couldn’t be easier!

 

Slow Cooker Carnitas

serves 4

 

1 pound pork roast

1/2 jar (8 ounces) tomatillo salsa..we like My Brother’s Salsa

salt and pepper

 

Place pork roast in the slow cooker and sprinkle with salt and pepper.  Cover with salsa, and cook on low for 6-8 hours.  Shred with a fork and serve with sour cream, avocados, cilantro, extra salsa, shredded cheese, and fresh lime.

 

 

Crispy Taco Bowls

 

fajita size flour tortillas

canola oil

 

Brush tortillas lightly with canola oil.  Shape into a bowl and place in the underside of a muffin tin.  Bake at 425 for 5-7 minutes, or until lightly browned and crispy.
